Hoto is Yamanashi's thick miso-and-pumpkin noodle stew. At Shoya, a hoto specialist on the shore of Lake Yamanaka, the pork version comes bubbling in an iron pot.

Calbee Kitchen Ebina SA is one of just 10 Calbee+ stores nationwide and the only one on the Tomei Expressway between Tokyo and Mt. Fuji. Fresh-fried Poteriko (the hot version of Jagariko, ¥340) and hot Pizza Potato (¥430) served 7:00-21:00 daily. Best Tue-Thu mid-morning.

A three-floor Nishijin sushi house running touchpanel-ordered conveyor sushi on 1F and private-room kaiseki on 2F and 3F. Nagasaki tuna, wild grouper, and the Hakata dual-format most foreign visitors miss.
